Beer Batter Waffles

During recipe creation, Left Hand Brewing’s Death Before Disco, a porter, was used for the savory waffles. Porters generally pair amazingly well with cheddar cheese and worked perfectly for this recipe. A semi-sweet boozy ale, Kentucky Bourbon Barrel Beer from Lexington Brewing and Distilling Co., was used for the sweet recipe.

The best part about these waffles is how flexible the recipe is. Switch out bacon for the sausage. Try different kinds of cheeses. And, of course, experiment with different beers:

  • For the Savory, try French-style country ales or saisons like Two Brothers Domain Dupage with swiss cheese and bacon.
  • For the Sweet, try a fruit ale like Fat Head’s Bumble Berry or a Russian Imperial Stout like North Coast Brewing Company’s Old Rasputin.


Savory Beer Batter Waffles

Yield: 6 Belgian-style waffles or 8 classic-style waffles

Ingredients:

  • 2 cups self-rising flour
  • 2 large eggs separated
  • ½ butter, melted
  • ¼ cup milk
  • 12 ounces beer
  • 1 cup shredded cheddar cheese or swiss cheese
  • ½ lb maple breakfast sausage
  • ¼ cup thin sliced scallions

Directions:

  1. Cook sausage in a large skillet over medium heat until thoroughly heated and cooked and broken into a crumble. Remove from heat and set aside.
  2. In a large mixing bowl, add flour, milk, egg yolks, melted butter, and beer. Mix well.
  3. In a separate bowl, beat egg whites with an electric mixer until stiff peaks begin to form. Gently stir into mixture.
  4. Add cooked sausage, shredded cheese, and scallions and gently stir until fully incorporated into the mixture.
  5. Scoop out approximately ¼-⅓ cup of batter and pour into a preheated waffle iron and cook until the waffles are crisp and golden.
  6. Serve immediately.

Serving Suggestions:

  • Serve with maple syrup.
  • Make an egg sandwich.
  • Hot sauce, hot sauce, hot sauce.
  • Smother in sausage gravy.
  • Serve with a dollop of sour cream and salsa.
  • Freeze leftovers and reheat in a toaster or toaster oven as needed.

 

Sweet Beer Batter Waffles

Yield: 6 Belgian-style waffles or 8 classic-style waffles

Ingredients:

  • 2 cups self-rising flour
  • ¼ cup granulated sugar
  • 2 large eggs separated
  • ½ butter, melted
  • ¼ cup milk
  • 12 ounces beer
  • 1 tsp vanilla extract
  • 1 tsp honey

Directions:

  1. In a large mixing bowl, add flour, milk, egg yolks, melted butter, and beer. Mix well.
  2. In a separate bowl, beat egg whites with an electric mixer until stiff peaks begin to form. Gently stir into mixture.
  3. Scoop out approximately ¼-⅓ cup of batter and pour into a preheated waffle iron and cook until the waffles are crisp and golden.
  4. Serve immediately.

 

Serving Suggestions:

  • Serve with maple syrup.
  • Serve with fruit and dollop of whipped cream.
  • Serve with vanilla ice cream.
  • Drizzle hot fudge or chocolate or add chocolate chips.
  • Freeze leftovers and reheat in a toaster or toaster oven as needed.
