A Thanksgiving Feast – Cavalier Style

Holiday traditions are part of what make this time of year special. At Cavalier, our Thanksgiving traditions include pairing our favorite craft beers with each course throughout the day. Happy Thanksgiving from our table to yours!

Welcome Your Guests: The following beers pair well with shrimp, Fruit Plates, Cheese and Crackers.

North Coast Scrimshaw – Available in Ohio and Indiana
Scrimshaw is a fresh tasting Pilsner brewed in the finest European tradition using Munich malt and Hallertauer and Tettnang hops. Scrimshaw has a subtle hop character, a crisp, clean palate, and a dry finish. 4.7% ABV.

Schofferhoffer Grapefruit – Available in Ohio and Indiana
The world’s first Hefeweizen (wheat beer) grapefruit beer. It’s a true 50/50 blend of total refreshment made from 50% Schofferhofer Hefeweizen blended with 50% carbonated juice of 100% natural ingredients. 2.5% ABV.

Breckenridge Avalanche – Available in Ohio and Indiana
Blend of pale and caramel malts – and just a kiss of bittering hops – to create a refreshing-but-flavorful, anytime beer. Aromas of pale grains, a semi-sweet middle and a clean-as-Coloradosnow finish make this Breckenridge Brewing’s best-selling beer. 5.4% ABV.

Appetizer Pairings: The following beers pair well with pork, cheeses, salad, spicy foods, and crab cakes.

Weihenstephaner Original – Available in Ohio and Indiana
Long storage makes this yellow bright lager a flavorful beer enjoyed with fine poured, white foam. With a mild hoppy note and its pleasant fresh spicy taste, it goes very well with salads, poultry, stews or with a hearty snack. 5.1% ABV.

Old Speckled Hen – Available in Ohio and Indiana
Old Speckled Hen has a full, smooth flavor and is very easy to drink. Its rich amber color and superb fruity aromas are complemented by a delicious blend of malty tastes. Toffee and malt combine with bitterness on the back of the tongue to give a balanced sweetness, all followed by a refreshingly dry finish. 4.5% ABV.

Reissdorf Kolsch – Available in Ohio and Indiana
Reissdorf Kolsch is a session style beer designed to be pale of color, soft on the palate, restrained on fruitiness, with a delicate dryness in the finish. 4.8% ABV.

Fat Head’s Sunshine Daydream – Available in Ohio, Indiana and Florida
This beer has big hop aromas and flavors of citrus, peach, orange and tropical fruit with a nice light malt backbone. Like a sweet coming, never fade away dream… because it’s deliciously real. This is a very drinkable session IPA. 4.9% ABV.

Entree Pairings: The following beers pair well with poultry, spicy foods, a variety of cheeses, potatoes, and walnuts.

Two Brothers Domaine DuPage – Available in Ohio, Indiana and Florida
Inspired by the brothers’ time living in France, Domaine DuPage is a food-friendly ale is deep amber in color, with a toasty and sweet caramel start. It finishes with just enough hops to clean off the palate. Bon Appétit! 5.9% ABV.

Great Divide Colette – Available in Ohio and Indiana
Brewed with barley, wheat and rice and fermented at high temperatures with a special blend of four different yeast strains, Colette is fruity and slightly tart, with a dry finish that makes it that rarest of treats. 7.3% ABV.

Bosteels Kwak – Available in Ohio and Indiana
Kwak is full-bodied and malty, with beautiful, juicy caramel notes. Lightly hopped, Kwak has just enough bitterness to offset it’s malty sweetness so the finish is demi-sec and “moreish”.  8.4% ABV.

Iron Maiden’s Trooper Beer – Available in Ohio and Indiana
TROOPER is a Premium British Beer inspired by Iron Maidenand handcrafted at Robinsons Brewery. Malt flavors and citric notes for a unique blend of hops give this deep golden ale a subtle hint of lemon. 4.7% ABV.

Jackie O’s Firefly Amber – Available in Ohio
Firefly Amber is Jackie O’s lightest offering. Lightly roasted malt gives Firefly Amber a biscuit-like finish. Carefully selected hops provide an herbal, mildly citrus, aroma and flavor. 4.5% ABV.

Boulevard Tank 7 – Available in Ohio
A traditional Belgian-style farmhouse ale and the perfect combination of elements came together perfectly. A big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish. 8.5% ABV.

Dessert Pairings

Pumpkin Pie with Founders Dirty Bastard – Available in Indiana
Dark ruby in color and brewed with seven varieties of imported malts. Complex in finish, with hints of smoke and peat, paired with a malty richness and a right hook of hop power to give it the bad attitude that a beer named Dirty Bastard has to live up to. 8.5% ABV.

Pumpkin Pie with Dogfish Punkin Ale – Available in Ohio
A full-bodied brown ale with smooth hints of pumpkin and brown sugar. Dogfish brews Punkin Ale with pumpkin meat, brown sugar and spices. As the season cools, this is the perfect beer to warm up with. 7% ABV.

Apple Cobbler with Crafted Artisan Vanilla Cinnamon
– Available in Ohio, Indiana and Florida
A semi-sweet mead that is crafted from 100% raw wildflower honey, water, and yeast. A trifecta of cinnamon  varieties is added during aging and coupled with Madagascar vanilla beans to impart their rich, warming flavors. 12% ABV.

Pecan Pie with Stone Coffee Milk Stout – Available in Ohio and Indiana
This English-style milk stout proved the perfect foil for beans from San Diego-based Ryan Bros Coffee. The bitterness of the coffee is balanced out brilliantly by the milk sugar we used to add a touch of sweetness and creaminess to the stout’s smooth, easy-drinking texture. 5% ABV.

Chocolate Pie with Ommegang Rosetta – Available in Ohio
A complex yet refreshing mahogany-brown brew that is an intriguing interplay of tartness and sweetness. This elegant fruit beer, matured on cherries, is brewed exclusively for Brewery Ommegang by Liefmans in Belgium. 5.6% ABV.
